Scones:
Our Scones are baked and then shipped frozen with an ice pack to preserve their freshness as there are no preservatives. They may thaw during delivery and should be refrigerated or frozen upon arrival if not consumed immediately. Please thaw before warming and assembling.
Clotted Cream:
Devon Cream Company Clotted Cream is shelf stable but must be refrigerated. Separation of the cream occurs in storage, so please stir before serving. Once refrigerated, to achieve spoonable creaminess, please soften at room temperature for 10 minutes before serving.

Scone Assembly
There are two approaches to assembling your scone, reflecting regional traditions. In Devon, the preferred order is clotted cream followed by jam, while the Cornish method places jam first, reserving the cream as a regal finishing touch on top. The beauty lies in personal preference.

Did you know, a properly baked scone should have a crack in the middle? It's customary to split your scone in half with your hands using this crack as a guide and not with a knife. When you use a knife to cut a scone, it flattens the inside of the scone and can make it dense. Splitting or breaking will ensure it stays nice and fluffy inside.
